Let's make something lovely.
- 01
Prepare the Batter:
- 02
In a mixing bowl, whisk together the whole wheat flour, low-fat milk, eggs, honey or maple syrup, salt, 1 tablespoon of melted butter, and vanilla extract until the mixture is smooth and slightly frothy on top.
- 03
Heat the Skillet:
- 04
Grease a small to medium skillet (about 8-10 inches) with a small amount of butter and set it over medium-low heat.
- 05
Cook the Crepes:
- 06
Pour about ¼ cup of the batter into the center of the skillet. Immediately lift the pan off the heat and tilt it to spread the batter evenly across the bottom of the pan.
- 07
Return the pan to the heat and cook the crepe for 30-60 seconds, or until the edges begin to lift and the bottom is golden brown.
- 08
Use a spatula to gently flip the crepe and cook the other side for another 30-60 seconds, until lightly golden.
- 09
Remove the crepe from the pan and place it on a plate. Cover to keep warm. Repeat with the remaining batter.
- 10
Serve:
- 11
Serve the crepes warm with your favorite healthy fillings, such as fresh fruit, Greek yogurt, or a drizzle of honey.
