Carl found the mushrooms in the dark, which is either his power or just good shopping.

Let's make something lovely.
- 01
Prepare the Mushrooms:
- 02
Trim the roots off the button mushrooms and rinse them under cold water.
- 03
Bring a pot of water to a boil. Boil the mushrooms for 1–2 minutes until they are slightly tender but still have a bite. Drain the mushrooms and set them aside.
- 04
Fry the Turkey:
- 05
Heat 1 tablespoon of olive oil in a pan over medium-high heat. Add the ground turkey and stir-fry for about 2-3 minutes until it starts to brown.
- 06
Once the turkey is browned, add 1/4 cup water and reduce the heat to low. Simmer the turkey until the water is absorbed, and the turkey is fully cooked, about 5 minutes. Set aside and let it cool slightly.
- 07
Assemble the Salad:
- 08
In a large mixing bowl, combine the cooked turkey, mushrooms, shallots, cilantro, mint, and grated carrot.
- 09
Add the lime juice, brown sugar, and low-sodium tamari/soy sauce, along with red chili flakes. Toss the ingredients gently until everything is well mixed.
- 10
Garnish and Serve:
- 11
Serve the salad garnished with sesame seeds and fresh herbs like cilantro and mint. You can also add chopped spinach for extra greens.
