Mia put the red chilli in last, for the colour. The heat was a bonus.

Let's make something lovely.
- 01
Prepare the Shrimp:
- 02
Peel and devein the shrimp, then set them aside for later use. If you want extra flavor, you can leave the shrimp shells or heads on during cooking.
- 03
Simmer the Aromatics:
- 04
In a wok or pot, bring 350 ml of water to a boil over medium heat. Once boiling, add the shallots, ginger, and lime zest to the pot.
- 05
Let the mixture simmer for about 3 minutes, allowing the flavors to infuse into the water.
- 06
Add Seasonings:
- 07
Stir in honey (or coconut sugar), low-sodium soy sauce, salt, and lime juice. Add the mushrooms and bring the soup back to a gentle boil.
- 08
Taste the soup and adjust seasoning as needed.
- 09
Add Coconut Milk:
- 10
Pour in the unsweetened coconut milk and allow the soup to simmer for a few minutes, making it creamy and flavorful.
- 11
Cook the Shrimp:
- 12
Add the shrimp to the simmering soup and cook them for 2-3 minutes, just until they are almost done. Be careful not to overcook them, as they will continue to cook in the hot soup.
- 13
Garnish and Serve:
- 14
Once the shrimp are cooked, stir in the green onions, cilantro, and parsley.
- 15
Serve the soup immediately, garnishing each bowl with additional green onions, cilantro, and parsley if desired.
