Let's make something lovely.
- 01
Prepare the Soup Base:
- 02
In a large wok or pot, heat 300 ml of water and 200 ml of light coconut milk over medium heat until it starts to gently boil.
- 03
Add fresh ginger slices and lime zest to the pot. This will act as the flavor base for the soup.
- 04
Add Seasonings:
- 05
Once the soup base is boiling, stir in low-sodium soy sauce, apple cider vinegar, salt, and brown sugar (or honey). Stir well until the sugar dissolves completely.
- 06
Add Chicken and Mushrooms:
- 07
Add the sliced chicken and mushrooms to the boiling broth. Cook for about 2-3 minutes or until the chicken is thoroughly cooked through, and the mushrooms are softened.
- 08
Add Fresh Greens and Garnish:
- 09
Stir in fresh spinach (if using), green onions, and cilantro. Let the spinach wilt for about 1 minute, then remove the pot from the heat.
- 10
Finish with a splash of lime juice for a tangy twist and serve the soup immediately.
