Healthy Glass Noodle Turkey
The noodles turn clear while they cook, which Carl finds unreasonably exciting.

Let's make something lovely.
- 01
Soak the Noodles:
- 02
Soak the glass noodles or rice noodles in cold water following the package instructions (typically 10-15 minutes) until softened. Drain the noodles and set aside.
- 03
Fry the Ground Turkey:
- 04
Heat 1 tablespoon of olive oil or avocado oil in a large pan over medium heat.
- 05
Add the lean ground turkey to the pan and cook, breaking it apart with a spatula. Fry for about 3-4 minutes, until the turkey is lightly browned.
- 06
Once the turkey is browned, add 1/4 cup of water to the pan. Reduce the heat to low and allow the turkey to simmer until the water is fully absorbed and the turkey is cooked through, about 5 minutes. Set aside and let it cool slightly.
- 07
Prepare the Dressing:
- 08
In a small bowl, whisk together the low-sodium soy sauce, maple syrup, and minced garlic. Stir until well combined.
- 09
Assemble the Salad:
- 10
In a large mixing bowl, combine the cooked ground turkey, soaked noodles, parsley, green onions, celery, tomatoes, jalapeño or red chili flakes, lime juice, and red onion.
- 11
Pour the prepared dressing over the salad and gently toss to combine all ingredients.
- 12
Add Seeds and Serve:
- 13
Stir in the roasted sunflower seeds for crunch.
- 14
Optional: Toss in shredded carrots and chopped spinach or mixed greens for added nutrition and texture.
- 15
Let the salad sit for a few minutes to allow the flavors to meld together before serving.
