Let's make something lovely.

  1. 01

    Sauté the Vegetables:

  2. 02

Heat the olive oil in a large pot over medium heat. Add the chopped celery, onion, garlic, and shredded carrots, and sauté for 2-3 minutes until the onions become translucent and the vegetables are softened.

  3. 03

    Add Chicken and Broth:

  4. 04

Add the cooked and diced chicken, low-sodium chicken broth, salt, pepper, and thyme to the pot. Bring the mixture to a boil.

  5. 05

    Cook the Gnocchi:

  6. 06

Gently stir in the whole wheat or cauliflower gnocchi. Boil for 3-4 minutes until the gnocchi starts to float, then reduce the heat to a simmer and cook for another 10 minutes.

  7. 07

Finish with Low-Fat Milk and Spinach:

  8. 08

Stir in the low-fat milk and Greek yogurt for creaminess. Add the fresh spinach and cook for another 1-2 minutes until the spinach is wilted and tender.

  9. 09

    Taste and Serve:

  10. 10

Taste the soup and adjust the seasoning with salt and pepper if needed. Serve hot, garnished with additional fresh herbs if desired.
