Chickpea Burgers
Ava never announces that there is no meat in these. She hands one over and lets it speak for itself.

Let's make something lovely.
- 01
Prepare the Chickpea Mixture:
- 02
In a food processor, pulse the onion, garlic, jalapeño, and cilantro (or parsley) until uniformly chopped.
- 03
Add the chickpeas, cumin, coriander, baking soda, and salt to the processor. Pulse until well combined but still slightly chunky for texture.
- 04
Transfer the mixture to a medium bowl and stir in the breadcrumbs, chia seeds, and ground flaxseed. Mix well, cover, and refrigerate for 20 minutes to allow the breadcrumbs to absorb any excess moisture.
- 05
Shape the Patties:
- 06
Using 1/3 cup of the chickpea mixture per patty, shape into four 3-inch-diameter patties.
- 07
Cooking Options: Bake or Fry
- 08
Baking Option (Healthier, Less Oil):
- 09
Preheat the oven to 375°F. Line a baking sheet with parchment paper or lightly grease it.
- 10
Place the patties on the baking sheet and brush each one lightly with olive oil.
- 11
Bake for 20 minutes, flipping halfway through, until the patties are golden brown and crisp.
- 12
Frying Option (Quicker, Crispier):
- 13
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- 14
Add the patties and cook for 3-4 minutes per side until golden and crispy.
- 15
Assemble the Burgers:
- 16
Serve the patties on toasted whole-wheat or gluten-free burger buns. Add optional toppings like sliced avocado, tomato, and fresh spinach or lettuce. Enjoy!
